Looking for a Cast iron tawa for roti and dosa kindly suggest the best which can serve for 4-5 years .

Have the ones sold locally, made by blacksmiths.

Special care needed is that they needed to be immediately, completely dried after every cleaning cycle.
Still, sometimes rusting or something can happen, if stored away for a few days too
hence again prior to the next use.. requires another check or scrub.

I would rather use the normal (aluminium) but hard anodised griddle/tawa for daily use chapati/roti though. Wrought iron wok/ kadhai that are in regular use for certain kinds of dishes, are still okay
but I personally never got the hang of quickly preparing rotis on an iron tawa, without first putting additional time to prep
or make one trial roti first.. to (sort of) cure the surface.
