Very few people preferred preferred 100% coffee. (Approx 20% Chicory) used to be must for good taste. So, only for people who wanted 100% coffee, they used to grind separately.

So, 100% coffee may not be right way to find good coffee, unless you really want chicory free coffee.

Most people are used to mix of coffee and chicory, which gives it a sweet taste. If you use 100% robusta beans and roast it to south indian filter level, taste would be quite bitter and unbearable for many. So 20% chicory mix is a fine blend.
